The recipe for Murray’s Pork and Veal Meatballs has been highly sought after by many of our ‘Winter Warmer’ guests. So, at last, you have the opportunity to replicate them at home but, be warned, they don’t taste quite the same unless you are enjoying the luxury and romance at ‘Somewhere Unique’

The meatballs are super easy, taste great, and freeze really well too. This recipe will produce about 30 meatballs. Enjoy!

Ingredients

500 grams Pork Mince
500 grams Veal Mince
1 cup breadcrumbs fresh is best but dry is also fine
½ cup Rice
2 crushed Garlic Cloves
1Tbs Vegeta Gourmet Vegetable Stock
1 Egg
Salt and Pepper
2 Tbs Mixed Herbs. (You can also use fresh – Rosemary and Oregano are great too!)
1 tin crushed Tomatoes
1 tin Tomato Soup
1 cup Beef Stock
1 cup of Water

Method

In a large bowl place mince, breadcrumbs, rice, garlic, vegeta, half the herbs and egg. Mix really well to combine.

In a large ovenproof dish with lid, place mixed herbs, soup, water, crushed tomatoes and beef stock. Stir to combine.

Roll meatballs into about the size of a 50 cent piece. (You don’t want them too big otherwise as the rice cooks they will break apart). Place each meatball into tomato sauce in ovenproof dish and put lid on. Bake in an oven for about an hour at 160 degrees. Check after 45 minutes. You will know when they are cooked as they will puff up. (You can always taste one, making sure the rice is cooked).

The meatballs are great served with either mash or pasta, and topped with plenty of fresh parsley and parmesan cheese.

Afterwards, to complete the recipe, indulge each other with a relaxing, romantic soak in a two-person bath and share a bottle of wine by a gas log fire, before cuddling up under luxuriously soft sheets in a dreamy king bed.
